Favorite Dessert Recipe

Warm Nutty Brownies, it's a Pampered Chef recipe.

Ingredients:
1 teaspoon vegetable oil
1 package (12 ounces) semi-sweet chocolate morsels, divided
1 package (18-21 ounces) brownie mix (plus ingredients to make cake-like brownies)
¾ cup packed brown sugar, divided
1 cup salted mixed nuts, divided
5 rolls (1.7 ounces each) milk chocolate-covered chewy caramels(Rolos), divided
(40 pieces total)
Vanilla ice cream (optional)


Preheat oven to 375°F. Lightly brush Large Bar Pan with oil using Chef’s Silicone Basting Brush. Chop 1½ cups of the chocolate morsels using Food Chopper. In Classic Batter Bowl, combine brownie mix, water, oil, eggs and ¼ cup of the brown sugar; mix well. Fold in chopped chocolate; pour batter into bar pan, spreading evenly using Small Mix ‘N Scraper®.

Chop nuts using Food Chopper. Combine half of the nuts and remaining ½ cup brown sugar; sprinkle evenly over brownie batter. Bake 20-22 minutes or until wooden pick inserted in center comes out clean.

Meanwhile, using Utility Knife, cut 16 caramels into quarters. Place remaining ½ cup chocolate morsels in Prep Bowl; microwave on HIGH 1 minute or until melted, stirring after each 20-second interval. Spoon melted chocolate into resealable plastic bag; set aside.

Remove bar pan from oven to Stackable Cooling Rack. Immediately press remaining 24 caramels evenly into brownie in four rows of six caramels each. Sprinkle quartered caramels and remaining nuts over brownies. Trim corner of chocolate-filled bag with Utility Knife; drizzle chocolate evenly over brownies. Cut into squares; serve warm using
Mini-Serving Spatula. Serve with ice cream, if desired.

I finally got me a decent apron that I am not embarrassed to wear. Katie made it for me and you can go here if you want to buy on of your own. Maybe one day I will have a picture of me cooking with it on. I don't do much cooking these day, but it will definitely be handy for the Holidays!

Arkansas Children's Hospital Clinicals

School has been crazy, but the time finally came for me to get to do my Pediatric Clinicals at Arkansas Children's Hospital in Little Rock, AR. I had a blast! I thought for sure I would cry from seeing all the sick little kiddos, but I didn't cry once. I did have to hold back some tears a few times. Once you know how much they are helping the little one's it's not so sad anymore, you become the strong one for the family.

We arrived in Little Rock on Thursday night for Orientation, then on Friday and Saturday we were there for 12 hours. I got back home last night at 9:30 and pretty much went straight to bed. I am still very tired, but I have gotten alot of paperwork done today and am almost caught up.

After this trip I realized how often things go wrong that we rarely hear about here in NWA. So many times mothers can have a healthy baby in Utero and the trauma and pressure changes from delivery are not taken well and can cause many problems! I got to see some micro premies that should still be cooking in their momma's oven, it is truly a miracle how medicine has advanced and that these babies are able to be alive! It truely is a miracle!!!

This is the group I went with on Thursday night for Orientation. This is only 1/3 of my class.

Favorite Recipe

This is really hard, to pick just 1! My favorite food of all time is Mexican so I will choose:

Chicken Enchilada Casserole


Ingredients:
3 boneless chicken breasts
1 packet enchilada seasoning(McCormick)
15 oz. Sour cream
1 can cream of mushroom
1 can cream of chicken
Shredded cheese
2 pkgs. fajita-size flour tortillas (whole wheat)
Large jar of salsa (chunky mild pace salsa)

Directions:
Boil chicken for 1 hour until very tender/leave in crock pot all day. Cool. Shred chicken. Preheat oven to 350. Combine soups, sour cream, and seasoning packet. Take tortillas one at a time and spread a dollop of the sour cream mixture in tortilla along with some chicken and shredded cheese. Roll up tortilla and place into a 9X13 casserole dish. Continue until pan is full. If any chicken is remaining, just sprinkle it on top of tortillas in the dish. Spread the remaining sour cream mixture on top of rolled tortillas and then spread salsa on top. Sprinkle the top with cheese. Cook in oven for 30 minutes.

I never use Cream of Mushroom, I just use 2 cans of Cream of Chicken. I also never use the Salsa.

Graduation Day!

We offically have our Solider back in the safety of my mom's home for 17 days!:):( I am glad he is here but sad at the same time:( In 6 days he turns 18 and in 17 days he leaves for Germany and he will be gone for 24 months before returning back to the US. I am so proud of him! If it weren't for people like him fighting for our freedom our country wouldn't be where it is today! I love him dearly, he's the baby!

Today was graduation and then we toured the new Infantry Soldier Museum, it's very nice! I got me a sit that says "Proud Army Sister" in pink of course & a key chain that says "Army Sister" also in pink :)

We finally made it home, the 7 hour trip took 9.5 hours because of a wreck that we got stuck behind in stand still traffic for over an hour and a nice Alabama man showed us the way to back track around the interstate. I am offically exhausted!

Turning Blue!

We arrived in Georgia about 6 am this morning local time after driving all night, rushed to get ready to make it to the base and then got lost so many times it took us an hour and a half to get where we were suppose to be. Oh, well! Now my baby brother is a Infantryman!:)

Crafty.

My baby brother is graduating from Army Boot Camp on September 4 so I was bound and determined to find some Army Pants that fit me for a decent price. I searched in Fayetteville at 2 Army stores with no luck, so I looked online and found pants. So, I cut them into Capri's when I got them and then bedazzled away!

I am not a hat kinda gal but I do like this hat and I ended up designing the cross myself because the cross that I had for the hat I made a boo boo on. Oh well!

Finally getting some things for our bedroom...

So after 2 1/2 years of having nothing on the walls in our bedroom or bathroom, I finally picked out a few things I wanted and had my friend Katie paint them for me. She is so crafty!

This painting has James 1:2-3 on it, I recently read this verse in a book that I am reading, Never Say Diet.


These two are for our bathroom just above our closets. I think they are perfect!



And, I couldn't post without a picture of my and my sweet little boy. I was listening to the radio this morning at work and they were asking a Trivia question about what animal is the happiest to see you when you get home and I instantly knew it was your dog and thought of this little boy! He makes my day:)

New Floors...

Last Friday we got new carpet installed in all 3 bedrooms. It was needed badly! We got new carpet before we moved in 2 1/2 years ago but didn't know that the cheap stuff didn't last very long, plus it was very stained and I had cut some of it up that the cat had peed on, so none the less WE NEEDED NEW CARPET!

This past Saturday an AWESOME friend helped us install laminate floors in our living room, we already had them in the hall so it wasn't that much but it was still hard work!

Saturday while William was mowing and I was working in the yard, Jack found this little friend and thought he was suppose to pick it up by his shell and carry him around.

Show Us Your Wedding Reception & Honeymoon...

Our "Reception" was so sweet, my mom had gotten a lovely lady that had been a GREAT example to be growing up and had previously made me a Pooh Bear cake for one of my birthday's, to make our wedding cake. It was DELICIOUS! I think I was her to make us another if she can get it all the way up here!:) Thanks to Sue Cash!

I am glad you can't tell on here but somehow, still not really sure how it happened, but me and my sister and law had both used a roll of the same film and almost all of my wedding pictures were ruined, but luckily you can't see the 2nd picture on here...:)

My Aunt bought us some Champagne for our toast, champagne is not for me. But, none the less, it was FUN!


The "Honeymoon", if you want to call it that. We didn't have any money, I had lost my job, moved to William's dad's house, had a car note and William started school in a week of so after we go married. So, We stayed at The French Quarter in Mid-town Memphis, TN. Pictures below of our room. After we arrived, we left our things and went to downtown, I still had on my dress and vail and William was still in his shirt and tie. We got lots of sweet words, weird looks and free stuff at the restaurant. We are at TGIFriday's. When we got back to our car, some sweet girls had left a note on our window saying CONGRATS! My mom had wrote on our car with window chalk and tied cans to the bumper, but the cans came off as soon as we got off my grandma's street.
